Rhubarb Muffins

 This weekend I finally found the time to make use of the rhubarb from my families garden. I found a recipe from a cookbook that my boyfriend's grandmother left him. The cookbook is called "Favorite Recipes of the Amish of Wisconsin."

First chop 1 1/2 C. fresh rhubarb.

Mix together 1 1/2 C. brown sugar, 1 egg, 1 C. milk, 2 tsp. vanilla, and 1/2 C. vegetable oil. I turned my mixture into a face :)

Add the wet mixture to your rhubarb.

Mix dry ingredients in a separate bowl. Use 2 1/2 C. flour, 1/2 tsp. salt, 1 tsp. baking soda, and 1 tsp. baking powder. Add dry ingredients to rhubarb mixture and stir.
Pour into greased muffin tins 1/2 to 2/3rds full. In a separate bowl stir 1 tsp. melted butter, 1/2 c. sugar, and 1 tsp. cinnamon. Sprinkle over muffins and bake 15 minutes at 375 degrees.

Enjoy your muffins for breakfast with milk!
